Chicken, Avocado, and Radish Sandwich
A tasty chicken salad sandwich is always good for lunch, but it can be a little mundane. That's why I jazzed mine up a bit. I took creamy avocados, crunchy radishes, juicy chicken pieces, and put it all on a buttery croissant. Instead of mundane, it's like a French bistro café!
Duck and Mixed Mushroom Salad with Orange Dressing
Duck is such a wonderful protein to work with - succulent, moist, and juicy. In this recipe, I mixed pan-fried duck with a variety of hearty mushrooms and greens into a salad. Duck traditionally goes well with orange, so I topped the salad with an orange dressing (that I created in another recipe). The balance of the crispy duck against the full mushrooms and tart dressing is simply delicious.
Here is a great, fruity dressing that is easy to make and delicious (especially if you like oranges). This orange dressing has a nice, sharp, but not too tart flavor, and it goes well with fish, chicken, and duck salads.
We introduced a vegetable compote last week, and this week we have a beautiful dessert based on it: a vegetable compote trifle. Our trifle has layers of the compote with delicious cake pieces and of course luscious whipped cream. It's a little different from your average dessert, and we think it has above average taste.
Compoting fruit is popular as a dessert, so why not with vegetables? Marinated cherry tomatoes and celery are delicious! Very versatile too, you can eat them straight, topped with yogurt, or as a component in other desserts (more decadent recipes coming soon...). Perfect for the summer season!
