Açaí berries have been getting more and more popular these days because not only are they high in antioxidants, but they are delicious too. You can easily find the berry juice in your local supermarket. This dish is a two-layer dessert made from the berry juice: one layer of gelee and one of mousse. It is easy to make, it melts in your mouth, it is delicious, and best of all, it is good for you.
Bruschetta variations are common these days, inspiring me to make some of my own. My version has mixed berries and basil leaves topping cheesy toasted baguette slices. The rich cheese taste goes well with the sweet and tangy berries and the basil leaves' burst of flavor. A colorful dish, it's a perfect match with Champaign as an appetizer, with coffee or tea as a dessert, or as a great party food. They can be served room-temperature or warm.
On a hot summer's day, it's always great to have something cool, sweet, and refreshing. I have created just such a dish: fruit ravioli. It's similar to regular ravioli in that it is stuffed pasta, but it's actually a dessert because the stuffing is honey flavored cream cheese and various fruits. Served chilled, it's quite a treat.

Food Couture's web-designer/photographer, Yoshiko, has a favorite food combination: avocado with honey. As an appreciation for her support, I created a dessert dish for her with these ingredients. She said that an avocado cut in half, drizzled with honey is very delicious. Based on this flavor, I created a dessert menu item, two-layered panna cotta. One layer has the flavor of honey with a silky texture, and the other layer has the full flavor of avocado with a velvety texture. This addictive dessert will make your mouth and taste buds smile.
