Açaí Berries Gelée Mousse

Açaí berries have been getting more and more popular these days because not only are they high in antioxidants, but they are delicious too. You can easily find the berry juice in your local supermarket. This dish is a two-layer dessert made from the berry juice: one layer of gelee and one of mousse. It is easy to make, it melts in your mouth, it is delicious, and best of all, it is good for you.

Ingredients

~For Mousse~
1 cup açaí berry juice
2/3 cup heavy cream
¼ cup granulated sugar
1 envelope (1/4 oz) unflavored gelatin
3 tbsp water

~For Gelée~
1 cup açaí berry juice
1 envelope (1/4 oz) unflavored gelatin
3 tbsp water

Directions

To make mousse, whip the heavy cream and sugar to soft peaks.
Combine unflavored gelatin and water in a microwave safe small bowl and mix well, heat it in microwave about 10 seconds until dissolved well. Whisk açaí berry juice and pour gelatin liquid in slowly. Then pour slowly into heavy cream and fold it gently until well combined. Pour the mixture into glasses and chill for more than 2 hours.

To make gelée, combine unflavored gelatin and water in a small microwave safe bowl and mix well, heat it in microwave about 10 seconds until dissolved well. Whisk açaí berry juice and pour gelatin liquid slowly. Pour into bowl and chill for more than 2 hours.

To serve, break up the chilled gelée into small pieces and put them over the mousse and serve.
