Peanut Butter Fondant

Have I got a decadent dessert for you. It's a peanut butter fondant and it's a peanut butter lover's dream. This desert has a warm velvety texture, a creamy gooey inside, and peanut buttery goodness throughout. Add to it whipped cream or vanilla ice cream and the decadence is complete!

Peanut Butter Fondant

Cook: 40 minutes


Makes 4 ramekins


6 tbsp unsalted butter, diced
10 oz milk chocolate chips
3 tsp peanut butter (for batter)
1/3 cup sugar
1 tbsp flour
2 eggs
4 tsp peanut butter (for filling)


Preheat the oven to 300 degrees F.

In a medium bowl, put diced butter and cover with saran wrap. Place it into microwave and cook for 1 minute. Take it out from the microwave and add chocolate, cover again and cook another 15 seconds. Mix well.
Add peanut butter and whisk well, add sugar, flour and whisk well again. Add eggs into mixture and whisk well again until incorporated.

Spray ramekins (2.5 to 3 inch diameter size) with a nonstick butter spray containing flour. Pour the mixture into sprayed ramekins until 2/3 full. Place 1 tsp of peanut butter gently into the center of the ramekin, and pour the rest of mixture over it.

Bake for 40 minutes.
Cool slightly, then invert the fondant onto a flat plate. Serve warm or at room temperature with whipped cream or vanilla ice cream.
