Easiest Roast Beef

You won't find an easier roast beef recipe to prepare than this one. Although it is easy to create, the meat will be tender, marinated and seasoned well, and with no gravy needed! When you taste this roast beef, you will be amazed!

Yield

Makes about 1 2/3 cups

Ingredients

1 (About 3-lbs) bottom round roast (or boneless rib roast), at room temperature
3 tbsp olive oil
1 tbsp coarse sea salt
1 tbsp freshly ground black pepper
1 tbsp garlic powder
1 tbsp onion powder
½ tbsp paprika powder
½ tsp dill seeds
3 bay leaves

Directions

Preheat the oven to 375 degrees F.
In a small bowl, mix together the olive oil, salt, pepper, garlic powder, onion powder, paprika powder, and dill seeds. Rub the mixture over the entire the roast. Place bay leaves on the top of roast.
Place the meat in a roasting pan, and place the pan in the oven. Roast until meat temperature is 135 degrees F for medium rare, 155 for medium, and 175 for well done. (Estimated cooking time is 1 hour and 30 minutes.)

Take the roast out of the oven, tent loosely with aluminum foil, and let rest for 15 minutes. The internal temperature of the meat should rise 5 degrees F more and the juices will redistribute into the roast.
To serve, slice the roast and place on a serving platter. Drizzle au jus over the meat as desired.
