Creamed spinach is a popular American side dish, and in creating my version of it, I used some French cooking techniques. Like other French recipes, it is very rich and creamy, and it has an outrageous taste you will love.
My brother-in-law and mother-in-law made a recipe request to me: something you can prepare in advance, that tastes good cool, room temperature, or warm, and is good for a pot luck party. So I created this dish, curried cous cous with spring vegetables. It's great for a pot luck party, it's bright & colorful and has a delightful south Asian flavor. It can also be made vegetarian/vegan.
Here is my 5th recipe variation using the Mascarpone cheese sauce: rice balls! They are cute little fried balls of rice about the size of meatballs. Melty mascapone sauce combines with rice to make them creamy on the inside, and the balls are lightly fried to make them crispy on the outside. They're great as a party appetizer, as well as a main entrée.
Besides being a famous Disney™ movie, ratatouille is also famous as a great dish from southern France. Usually it is made with a lot of vegetables and tomatoes. My version is a little different - it has a lot of mushrooms and zucchini in a rich brown sauce with many other flavors. Tres magnifique!
