Mushroom Brown Ratatouille

Besides being a famous Disney™ movie, ratatouille is also famous as a great dish from southern France. Usually it is made with a lot of vegetables and tomatoes. My version is a little different - it has a lot of mushrooms and zucchini in a rich brown sauce with many other flavors. Tres magnifique!

Mushroom Brown Ratatouille

Cook: 25 minutes


Makes 4 servings


1 can (14.5 oz) beef broth
1 clove garlic, minced
10 white mushrooms, cut into quarters*
10 baby portobello mushrooms, cut into quarters*
2 zucchini, cut into bite-sized pieces
2 tbsp olive oil
1 tsp white wine
6 oz tomato juice
½ tsp Italian seasoning
½ tsp kosher salt
1/8 tsp black pepper

* use any type of mushrooms you like, such as oyster mushrooms, shiitake mushrooms, enoki mushrooms, etc.


Cook beef broth in a small saucepan over medium-high heat and reduce by ¼ cup, 30 - 40 minutes. Turn heat off and set aside.

Heat a medium saucepan over medium heat and add olive oil and garlic. Add mushrooms and cook about 3 minutes. Add zucchini and cook another 3 minutes. Add white wine, reduced beef broth, tomato juice, Italian seasoning, kosher salt, and black pepper and cook for 15 minutes.
Serve warm.
