Chilled Edamame Soup with Tomato Cream
Summer is here! To cool off from the heat, I wanted something chilled but that still had a depth of flavor. So I created a Vichyssoise (pureed potato soup) made from edamame. You will love its silky smooth texture and edamame richness. Top it off with tomato cream and it is even better and prettier. Great for a summer party!

Tomato soup is wonderfully warm, creamy and comforting. I have a new gourmet version that is all that with a professional taste: roasted bell peppers and a hint of onion. But just like the original, it is easy to make and goes great with your favorite sandwich.
Is there any food more comforting than a warm, steaming bowl of chili? Vegans unfortunately have had their chili bowls only half full, so to speak, because of the decision not to include meat. This chili recipe fills the bowl by substituting brown rice for ground beef. It is a healthy, hardy (and comforting) replacement.
