Zuppa Toscana

Here is a soup that is popular in America: Zuppa Toscana. It is just perfect for the upcoming cold season. It is hearty and warm, and it contains kale, which adds a really nice texture. With the Food Couture Original Homemade Italian sausage in it, this soup has a great depth of flavor. Not only that, but it is easy to cook, too.

Makes 4 servings

Ingredients

2 bacon strips, cut into small pieces
1 tbsp extra virgin olive oil
8 oz Food Couture Homemade Italian sausage
8 oz (1¾ cup) onion, chopped
1 large (about 10 oz) russet potato, ½-inch size diced
2 14.5 fl oz can reduced sodium chicken broth
¼ cup heavy cream
¼ tsp kosher salt or more to taste
1/8 tsp black pepper
3 oz kale, cut into bite sized

Directions

Cook bacon in a heavy pot over medium-high heat. Add Italian sausage and cook and crumble into small pieces until browned. Add and sauté onion until gently sweat, soft and translucent. Do NOT let them brown. Add potatoes and cook another couple of minutes. Add chicken stock and bring to a boil, and bring back to low-heat and simmer very gently for 5 - 10 minutes until potatoes are cooked through and soft. (Remove excess fat and skim off the froth if necessary) Add heavy cream and kale and simmer another couple of minutes. Add salt and black pepper to taste.
Serve warm.
