Mascarpone Cream Sauce

This is one of the most convenient and delicious white sauces in your kitchen. It is simple and the base for hundreds of other recipes. Mascarpone cheese is famous as an ingredient of Tiramisu, but this sauce can be used for pasta, risotto, and many other entrees. Just prepare this sauce in advance. Dinner dishes you create with it will be outstanding, just like from a restaurant!

Mascarpone Cream Sauce

Yield

Makes about 2 cups

Ingredients

2 tbsp olive oil
1 clove garlic, small minced
½ medium size onion, small minced
¼ cup white wine
8 oz Mascarpone cheese
½ cup milk
½ tsp salt
white pepper

Directions

Heat the olive oil over a medium-high heat. Add the onions and garlic and sauté until the onions are translucent, about 10 minutes.
Add the white wine and cook about 30 seconds (will be reduced by half.)
Add Mascarpone cheese and milk, and cook about 2 minutes until well blended.
Season the sauce with salt and a pinch of white pepper. (Do not overcook the sauce or the oil will separate.)
Cool, then cover and refrigerate. This sauce can be made up to 1 week ahead.
